Guacamole Recipe

  • 2 avocados
  • 1 small tomato
  • 1 small red capsicum
  • 1 small onion or spring onions (scallions)
  • 1 tablespoon of finely chopped fresh coriander (cilantro)
  • ¼ cup of sour cream
  • 1 tablespoon of lemon or lime juice
  • 3 to 4 drops of Tabasco sauce or to taste
  • salt and pepper to taste

Cut the avocados in half, remove the stones and scoop out the flesh into a small bowl. Using a fork, mash the avocados until smooth. Peel the onion and chop very finely. Peel the tomato by carefully making a cross with a knife on the bottom of the tomato and lowering it into a bowl of boiling water for 30 seconds. Then run the tomato under cold water. The skin should have begun to lift making it easier to peel off completely. Finely chop the tomato, red capsicum and coriander. Mix all the ingredients together. Chill and serve with corn chips or add to tacos or nachos.
