Ultimate Chocolate Chippie Biscuit Recipe

This recipe makes large thick and chewy cookies. I sometimes add chopped almonds and dried apricots for a gourmet cookie.

  • 2 cups flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 180 grams butter - melted (not softened) and cooled slighty
  • 1 cup brown sugar
  • ½ cup white sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tsp vanilla essence
  • 1½ cups chocolate buttons

Preheat the oven to 170°C. In a large bowl mix the flour, salt and baking soda together. In another bowl mix the butter and both sugars well, then beat in the vanilla and the eggs - one at a time. Add the rest of the dry ingredients and mix until just combined. Stir in the chocolate buttons.

With a large spoon scoop good size mounds of dough onto a lined baking tray. Do not flatten! Bake the cookies for 15 minutes until they are light golden and still a little puffy.
