Apple and Walnut Muffins Recipe

A slightly spicy muffin with all the freshness of raw grated apple, packed with walnuts.

  • 1¾ cups of flour
  • ¾ teaspoon of baking soda
  • ¼ teaspoon of cinnamon
  • ¾ cup of white sugar
  • 2 eggs
  • ½ cup of vegetable oil
  • 1 teaspoon of vanilla essence
  • ½ cup of chopped walnuts
  • 1½ cups of grated apple

Preheat the oven to 190°C, 375°F or gas mark 5. Sift the flour, baking soda and cinnamon into a large bowl. Stir in the sugar. In another bowl, beat the eggs, oil and vanilla together. Pour the wet mixture into the centre of the dry ingredients and add the walnuts and apple. Fold carefully until the dry ingredients are just moistened. Do not to over mix or the muffins will resemble small lead weights. Spoon into greased muffin tins.
Bake for 15 to 20 minutes.

(Makes 12 muffins)
