![]() | Apple and Walnut Muffins RecipeA slightly spicy muffin with all the freshness of raw grated apple, packed with walnuts.
Preheat the oven to 190°C, 375°F or gas mark 5. Sift the flour,
baking soda and cinnamon into a large bowl. Stir in the sugar. In another
bowl, beat the eggs, oil and vanilla together. Pour the wet mixture into
the centre of the dry ingredients and add the walnuts and apple. Fold
carefully until the dry ingredients are just moistened. Do not to over mix
or the muffins will resemble small lead weights. Spoon into greased muffin
